Chef Shane showcases over eight years of experience leading Australian hotel kitchens. Drawing on her Chinese heritage, international exposure, and strong Western culinary foundation, she crafts contemporary interpretations of Chinese flavours that are refined, balanced, and thoughtfully modern.

Chef Phitchanan Natsatianpong
Chef Phitchanan is a Thailand‑born chef with over a decade of experience in Asian cuisine. She brings traditional Thai techniques into a contemporary approach to flavour, crafting handcrafted dim sum that highlights precision and authenticity. Each dish reflects her commitment to quality, balance, and togetherness.
